Planting

During winter time, the soil rests and gets prepared. Then, after being notified to the authorities, planting can start and need to be achieved by the end of May. Actually, all EU member countries are subject to fixed annual quotas for wine production. New plants must grow for 2 years before being harvestedin their third year to produce the AOC Champagne.
Inter-row and intra-row spacing is regulated in order to optimize the quality of the grapes.The average planting density must be of about 8,000 plants per hectare.This high planting density provides optimal conditions for photosynthesis and forces the plants to compete for water and nutrients which in the ends benefits to the quality of the fruits and thus to that of the champagne.
